Chevres Goat Cheese: A Brief History

Chevres, a type of goat cheese, has been made in France since the 8th century. It is said to have been brought to France by the Moors. The Arabs invaded the Loire region of France in the 8th century, bringing their prized goats with them. Since that time, the craft of Chevres making has been perfected in the region. Famous Chevres include Bucheron, Chabis, Crottin de Chavignol (the largest goats cheese in production) Saint-Pierre, Rocamadour, Pyramide and Saint Maure de Touraine. Some goat cheeses are young with a softer texture while other are aged a bit more in a similar manner to Camembert or Brie with a unique rind that is made with wood ash.
